Vanilla Bean Sponge

3eggs,roomtemperature&separated
¾cupcastersugar
1vanillabean,splitandseedsremoved
1cupselfraisingflour,sifted
1. Greaseandfloura20cmcaketin.
Preheatovento180°C.
2. Inamixingbowl,placetheeggwhites.
Beatuntilsoftpeaksform,usinghigh
‘HI’speeds.
3. Addcastersugarandbeatuntilmixture
isthickandglossy.Beatintheeggyolks
andvanilla,continuemixinguntilthe
mixtureiswellcombined.
4. Stopthemixerandremovebeaters.Using
alargemetalspoonoraplasticspatula
foldintheflourand3tablespoonsof
water.Makesurethemixtureiswell
combinedandtakecarenottooverbeat
asyouwilllosetheairbubblesandthe
mixturewillbeflatandtough.
5. Spoonthemixtureevenlyintothegreased
tinandbakefor20-25minutesoruntil
askewerisinsertedinthecentreandit
comesoutclean.
6. Oncecookedrunaknifearoundthesides
ofthecaketoloosenthespongefromthe
panandgentlytapthebottomofthepan,
turnoutontoacoolingrack.Allowtocool
beforeusing.
Note:Ifyoudonothavevanillabeansusea
vanillaextractoressencerememberingthat
theextractisconcentratesoonlyuseadrop.
Serving suggestion:
Whencakeiscool,cutandspreadthebase
withyourfavouritejamandtopwithfirmly
whippedcream.Placeonesandwichontop
oftheothertomake1cake.Siftwithicing
sugarforaplaineffortorusemorewhipped
creamandtopwithfreshberries.
